The main meat eating I do anymore is sandwiches at lunch. Do any of the veggie eaters out there have good ideas for quick veggie lunches? What tasty options are out there for slapping between two pieces of bread, or other ideas too? We're lucky here in Austin to have Whole Foods and even the regular groceries stock a fair bit of veggie stuff. But last time I went veggie, sandwich meat substitutes were not all that terrific. What leaps and bounds have been made that you'd recommend?

I actually like fake lunch meat. Have you tried Yves brand stuff? Pretty good. Of course, it's been a long time since I've had the actual meat.

Hummus is always good. You don't have to use pita bread, but it helps.

Gardenburger and Morningstar Farms have good faux-burgers, in a variety of flavors. Some of them, like the MF black bean burger, don't try to taste like meat. (The black bean burger is excellent, btw).

I also know some decent recipes. I tried making tofu cutlets the other day, and it went well. It's not all that hard, and they keep well, so you can just pull a couple out of the fridge in the morning. Let me know if you're interested, and I'll e-mail it to you.

Also if you like, we can do a shopping excursion some time. I can show you really easy veggie recipes, and where to get stuff if you're having trouble finding anything.

Morningstar meat substitutes, actually, have improved over the last few years. The faux bacon is great.
There's also falafel for sandwich makings.

I am not a fan of the fake luncheon meats. On sandwiches I generally use a slab of fried and seasoned tofu or some fried and seasoned seitan strips. The pre-made baked tofu available in most stores is also good on sandwiches and does not need any preparation.

I do like Boca burgers, but they taste better fried than nuked.

Morning star is good.

I also like the Ives brand. The fake pepperoni is good on pizza. Their "Canadian Bacon" seems pretty ham like to me but it has been 17 years. Wow, now I feel really old.

i used to make the most amazing grilled portabella sandwhiches...here goes.

grill the mushroom
get bread
smoosh avacado on one side (like mayo, but better)
smoosh cream cheese or more avacado or mayo on the other.
add sprouts and/or lettus
tomato slices
olives if you like
and pretty much any other yummy veggie you can think of.

hummus might be great on it too. oooh or olive salad (mufellata)
